Whenever I have a bad day or things just are not going to plan the best way to turn my day around is to change the focus of my day. I do this using a unique revolutionary self-motivation technique which I learnt spending thousands of hours slaving over a hot baker’s oven…

I call it PASTRY THERAPY…

Yes you may laugh and yes I clearly have spent way too many hours in the kitchen and the flour has infected my brain….but hear me out as it may save you thousands of dollars in counselling fees and Prozac…..

It all stems from the fact that if something does not work out right you are probably doing something wrong….if you’re having a  bad day, the way to turn it around is to do something that you find pleasurable and are successful at….You follow….

One of my favourite desserts is Chocolate éclair’s….simple, tasty, and I usually have all the ingredients on hand…..The success or failure of an éclair is the choux pastry…To this day even though I have made them thousands of times, after piping this gorgeous golden paste onto the tray I am still fascinated the way they puff up all crisp and light on the outside and hollow in the middle.

So where is the therapy you say…..Well it is on many levels……Firstly, the minute I remove them from the oven I know I have created something wonderful that is going to bring joy (and maybe a few calories) to whoever eats them….Secondly I have proved that not everything in my day has gone bad, that if I follow my training and approach the recipe in a calm relaxed manner that I will get a positive result…..Thirdly if I apply the same approach to whatever has caused the problem in my day I will usually solve whatever is wrong……

This may seem too simple to work……..as with a beautiful recipe, some of the most beautiful pastry creations in my opinion are created with some of the most simple recipes…….Some of the biggest problems in one’s life can be fixed by taking some time out to do something that re-aligns their thought structure and shows there psyche that they are capable of creating something beautiful so simply. This frees your mind from some of the baggage that maybe holding it in a rut and gives it the time out it needs to better handle any problems……

And if this all fails the relaxation and the pleasure you will get from a nice cup of tea or coffee and devouring a few of my chocolate éclair’s will certainly do the trick…….
